Tacos and similar dishes are very attractive and always appealing, perhaps partly because of the attractiveness of eat with your hands. But if we want to take a little care of what we eat, especially after the holidays, it is normal to avoid hydrate bases such as tortillas and other flatbreads.
In that case we can resort to the versatile – and very light – lettuce leaves to prepare some Tacos with creamy chicken and yogurt salad, a very versatile recipe that will also serve as a leftover kitchen.
It is ideal to take advantage of roasted chicken or breasts that we already have cooked, although we can always prepare them on purpose for this dish. I recommend making a previous brine to leave them more juicy, and steamed or baked, which come out tastier. Or simply grilled.
On this occasion we add the crispy and freshly chopped celery with the fine grated carrot, different textures that make each bite more interesting. The creaminess and binding of the salad is provided by the mixture of yogurt, mustard and dressings, which, as always, can be adjusted to taste. If you prefer to avoid mayonnaise completely, you can use cream cheese or smoothie, or more yogurt.
If we cook the chicken from scratch, leave it in brine previously in a bowl covered with very salty water, as described here. After, salt and pepper grilled, steamed or in the oven, until the meat is well done inside.
Let cool slightly and chop by knife. Apart wash the vegetables and peel the carrot. Remove the thickest filaments and finely chop the celery with its leaves. Grate the carrot very thin and chop the tomato.
Mix everything in a bowl with the chicken, add the ingredients of the sauce and mix. Salpimentar and season to taste, mixing gently until you have a homogeneous mely combination. Try and adjust as we like more spicy, with more lemon …
Wash and dry gently whole leaves of romaine lettuce and fill with the salad mixture. Serve as if they were tacos, or roll a little to form a kind of fajitas.
